Why You’ll Love This Chicken

When my sister Hillary and her husband first got married, her husband wouldn’t really eat the chicken she made. He’s not a picky guy, but after a few bites he’d say he wasn’t hungry. She just figured he didn’t like chicken much—grilled or otherwise.

But here’s the twist: Hillary loves chicken. It’s lean, adaptable, and key to keeping meals varied and healthy. Everything changed when she discovered the marinated chicken breasts from their local butcher in Champaign, Illinois. They soak in marinade all day until you buy them, and once grilled or baked, they’re perfectly juicy and tender. And guess what? My brother-in-law devoured them—then went back for seconds.

That’s when she realized: it wasn’t chicken he disliked—it was my sister’s chicken.

A Game-Changing Chicken Recipe

Enter the family chef, Stevens (yours truly).

On a family visit to Arizona, I cooked an incredible chicken breast, and my brother-in-law gobbled it up. Hillary begged for the recipe (she couldn’t handle another chicken flop), and I delivered. Ever since, this has been our family fail-proof, crowd-pleasing favorite. Sweet relief!

If you’ve ever struggled to make juicy, flavorful chicken, this recipe might just make you a kitchen hero.

The Best Way to Cook Lemon Tarragon Thyme Chicken

Grilling (Our Favorite!)

Grilling brings out the best in this marinade. The sugars caramelize beautifully, giving the chicken a flavorful crust while keeping the inside super juicy and tender.

Stovetop (Great for Rainy Days or Winter)

If grilling’s not an option, pan-sear the chicken at high heat for 3 minutes per side in a heavy skillet. This caramelizes the marinade and locks in moisture Then:

  • Cover the pan.
  • Lower the heat.
  • Cook for another 5–8 minutes until the internal temperature reaches 160°F.
  • Rest for 5 minutes before serving.

This chicken is incredibly versatile! Here are some of our favorite ways to serve it:

  • With grilled lemon slices – Serve alongside rice and your favorite veggie.
  • Over a salad – It pairs perfectly with our Herby Garden Salad (coming soon!).
  • In tacos – Add to corn tortillas with beans and your favorite toppings. I highly recommend our Holy Grail of Corn Tortillas.
  • In a wrap – Try it with bacon, basil, tomatoes, lettuce, and mayo.

Tips and Tricks for Perfect Lemon Tarragon Thyme Chicken

  • Marinate for flavor: One hour works, but five hours is better. Overnight? Even better.
  • Choose organic when possible: Organic breasts tend to be smaller and more tender.
  • Butterfly larger breasts: This helps the marinade soak in and ensures even cooking.
  • Meal prep tip: Place chicken and marinade in a freezer-safe bag and freeze. Move to the fridge the night before cooking, then thaw safely in the fridge or with the cold water method (not on the counter for food safety).

🔥 Avoid thawing meat on the counter for extended periods to prevent bacterial growth. Always thaw in the fridge or in a sealed bag submerged in cold water.

  • Scaling the recipe: The marinade works for 4–6 breasts, or up to 8 if needed. For more than 8, double the marinade.

Conclusion

Whether you’re cooking for a weeknight dinner or entertaining guests, this Lemon Tarragon Thyme Chicken won’t let you down. It’s a recipe born out of trial and error—and now it’s one of our most trusted favorites.
