I decided to make these Indulgent Rich Chocolate Brownies – Gluten Free on a whim. With a bunch of other recipes in the pipeline, I went Steve style and jumped at something that wasn’t even on the list to begin with. It turns out, it was a deliciously rewarding decision.
Keeping These Indulgent Rich Chocolate Brownies – Gluten Free Away From Children
The best part of making these brownies was that my kids for some reason hadn’t ever been introduced to brownies… And, they still haven’t! It’s strange right? I make cookies, cake, muffins, toffee, etc… and it’s as if there were two little bull sharks circling the kitchen island waiting to try a bite. These brownies in all their elegance and sea salt sparkles just sat on the cake plate with the boys totally unaware! Normally they try to negotiate treats for breakfast, so realistically this was a bit of a relief!
It’s a different story with the neighbors… I heard rumors of one anonymous individual making excuses to “fold” clothes in the laundry room. Meanwhile the brownie plate mysteriously vanished. I am not making any conjectures, but there seems to be quite a coincidence of events in that house.
The Short History of Brownies
Here is an interesting fact, the first brownies created are accredited to a Chicagoan Socialite! In 1893, Bertha Palmer, the original owner of the Palmer House Hotel asked her chef to create a small cake-like dessert. The specifications were that it could be handheld and fit in the lunchboxes of guests attending Chicago’s World Columbian Exposition. The result was a delicious handheld cake made of chocolate, walnuts, and an apricot glaze later on named the Palmer House Brownie. While you can no longer find Mrs. Bertha Palmer at the Palmer House, you can still find the original brownies on the dessert menu and the recipe is openly available.
It is shocking, to me, that brownies are an American creation. Yes, most of us love them and have eaten a half pan ourselves, but still… A mix between confections and cake seems much more European. Either way, we’ll take the credit!
A Nib of Toffee
In this Indulgent Rich Brownies – Gluten Free recipe I originally put toffee nibs in the batter. It turns out, it added absolutely nothing to it, but it’s amazing for the frosting. It seems that when in the batter, the nibs just dissolve, not adding an intended crunch or burst of toffee flavor. It’s a different story with the frosting. After your the chocolate melts, immediately frost the brownies, and add the toffee nibs. If the chocolate frosting solidifies before the nibs are added, they will just roll off.

It’s incredibly easy, and once you make it, you’ll add it to your arsenal of treats. Also, if you’re making this recipe for anyone with a nut allergy, you can easily alter the recipe to avoid nuts. This time around, I found Heath English Toffee Nibs. Hershey’s sells both Heath Bar Nibs and Heath English Toffee Nibs, either would be great on these brownies.
Yogurt Makes this Indulgent Rich Chocolate Brownies – Gluten Free Great!
I love baking with yogurt as one of my liquid ingredients. Yogurt adds moisture, softness, and helps baked goods rise. Depending on your need, yogurt can be a great substitution for a variety of ingredients. It can be used as a replacement for Eggs, Milk, Buttermilk, Sour Cream, Crème Fraîche, and Heavy Cream. With a slight tanginess and a perfect amount of fat, yogurt brings out the flavor of other ingredients and adds that perfect moisture content.
Keep in mind, not all yogurt is the same. And while measurements aren’t too different, the more liquid a yogurt is, the less you’ll need. In terms of types of yogurts, there’s Traditional Yogurt, Greek, Australian, French, Icelandic, etc… While I adore a good Australian style yogurt like Noosa, I prefer to use Greek Yogurt for baking. The density of the greek yogurt, in my opinion, helps keep the thickness of batters and doughs. This Indulgent Rich Chocolate Brownies – Gluten Free also makes for a great cake! I would recommend doubling the recipe and using two 9 inch round pans lined in parchment paper. Using this vs the square 8×8 will lead to a bit more even cooking and the ability to easily stack the layers. I haven’t tried doubling the recipe in a single pan, but it may work as well. The biggest factor to watch out for is the outside burning before the inside is finished. With an additional 10 minutes of cooking I think you should be fine.
Tips and Tricks For Indulgent Rich Chocolate Brownies – Gluten Free
- These brownies freeze well. The frosting used is a bit harder, so you don’t have to worry about it smudging at all. Remove the brownies from the freezer and let them naturally thaw for 6-12 hours.
- At room temperature, these Indulgent Rich Chocolate Brownies – Gluten Free should last in a cake plate for approximately 3 days. If covered and refrigerated you should get a few additional days out of them. I do recommend adding a layer of paper towel on top of the brownies to absorb any excess moisture.
- Skip the chocolate, add 1 more tsp of vanilla extract and 1/2 cup more brown sugar to make blondies! It would be amazing with a creamy toffee frosting!
- In good midwestern style, serve it with ice cream! We love this flavor from Jeni’s.
