While all the options I mentioned are great, I do have one absolute favorite way of using my beef barbacoa recipe. Specifically, this favorite use for the delicious meat is for birria tacos! But first, what exactly is a birria taco? Simply put, a birria taco is made by soaking a corn tortilla in the beef consommé—the flavorful broth the barbacoa was cooked in. Next, the tortilla is placed in a frying pan along with Chihuahua cheese and the tender meat, folded over, and pan-fried to perfection. Finally, as always, top it with some cilantro, onion, lime, and hot sauce—and wow, it’s truly a match made in heaven!
How to Make Beef Barbacoa
Honestly, this is a pretty simple recipe. It’s straightforward and most of the cooking time it’s hands off. So let me give you a quick run down:
Prepare & Cook
- Mise en Place: Get everything laid out, the beef cut, onions chopped, garlic chopped, liquids measured… This is referred to as “Mise en place” style of cooking. I find it the most efficient way to cook, it’s a bit more soothing than running around looking for ingredients or a measuring cup while you’re supposed to be stirring, etc…
- Preheat the oven to 375°F – remember to adjust the racks to fit a Dutch Oven.
- Brown the Beef: Combine the meat with the salt, cumin, and oregano. In a large Dutch Oven, pour in the oil, and on high brown your pieces of beef on at least two sides. This caramelization helps bring out more depth to the flavor of the meat.
- Deglaze & Combine: Once browned, pour in the apple cider vinegar and scrape the pot with a wooden spoon to deglaze and release the caramelization. Combine remaining ingredients and bring to a boil.
- Braise: Once at a boil, Cover Dutch oven, place in a preheated 375°F oven for 15 minutes. Reduce temperature to 325°F and continue cooking for 2 to 2¼ hours until tender.
- (Pro Tip: I like my Barbacoa to be tender, but not so tender that it can’t hold up under pressure. So, I usually pull it out of the oven at the 2 hour mark for a total of 2 hours and 15 minutes. If you prefer totally shredded, cook it for a total of 2 hours and 30 minutes.)
Finish & Serve
- Shred & Finish: Remove the meat from the oven, let it cool for 20 minutes, then partially shred it and remove any excess gristle. I prefer having some chunks… you can always shred it finer later.
- Keep the Broth: You’re going to have a significant amount of broth left in the dutch oven. Next, pour about half of it on the meat, then reserve the other half for reheating or dipping (ideal for birria tacos).
- Broil for Caramelization: Before serving, place portions under broiler in a cast iron pan until browned and caramelized on top.
- Garnish & Serve: Top with fresh cilantro and lime wedges—enjoy immediately!

Tips for Perfect Barbacoa Every Time
- Meat Choices – Chuck roast’s marbling creates the best flavor and tenderness. Leaner cuts may require additional fat, such as lard or beef tallow (2-3 tbsp should do the trick!)
- Tamari – You’ll notice in the ingredients something that doesn’t quite seem to fit. Yes, that’s tamari or gluten free soy sauce. Tamari and soy sauce are used to increase the richness of the beef flavor. - Pick a Pepper- In this shredded Mexican Beef recipe, making it a bit more approachable, I solely used Ancho Chili Powder and a diced Poblano Chili for my peppers. Often I’ll use whole dried Ancho or Guajillo Peppers, but they’re not as easy to find and the heat tends to vary. In regards to Chipotle Peppers, again depending upon the brand, you may add too much heat, and the adobo sauce can easily overpower the rest of the flavors. In my opinion, use Chipotle Peppers sparingly to add a bit of smokiness.

- 5.5 lbs Beef Chuck Roast
- 2 Tbsp Avocado Oil
- 3 tsp Himalayan Pink Salt
- 2 tsp Ground Cumin

- ¼ Cup Apple Cider Vinegar

Instructions
- Prep all your ingredients.
- Preheat your oven to 375°F.
- Slice the Chuck Roast into 3-4 inch pieces. Then toss with the salt, cumin, and oregano.
- In a large Dutch Oven, preheat on high with the oil, and brown the meat. This is merely for flavor, so you really only need to get a couple sides nicely browned.

- Once browned, add the apple cider vinegar to deglaze the pan, use a wooden spoon to scrape the sides. Then add in the rest of the ingredients. Mix together and bring the pot to a boil.

- Once at a boil, stick it in the oven at 375°F for 15 minutes, then reduce the temperature to 325°F and keep braising for another 2 hours to 2 hours and 15 minutes.

- Remove the bay leaves and roughly shred the meat to your preferred consistency using 2 large forks.
