Ingredients
  

  • 2 lbs Red Potatoes- Partially Peeled and Quartered (8-9 Medium Sized Red Potatoes)
  • 6 Cloves Garlic
  • ½ Cup Butter- Melted
  • ¼ Cup Sour Cream
  • ½ Cup Milk
  • 1.5 tsp Himalayan Pink Salt
  • 2 tsp Fresh Ground Black Pepper

Instructions
 

  • First scrub your potatoes under cold water. Once clean, using a knife or vegetable peeler, remove approximately half the peel and quarter the potatoes.

  • Place the quartered potatoes in a large mixing bowl with cold water. (This helps remove excess starch and prevents oxidation/browning). Once all the potatoes have been prepped, strain them and place them in a large pot. Fill the pot with cold water about an inch higher than the top of the potatoes. Drop the Garlic Cloves into the water with the potatoes.

  • Bring the potatoes to a boil on high heat. Once at a consistent boil, reduce the heat to medium. After approximately 20 minutes, test your potatoes tenderness. You want a fork to easily slide into the potato.

  • Once cooked, strain the potatoes and garlic cloves, then immediately add them to a large mixing bowl. Smash the potatoes down manually, then pour in the melted butter and mix with a hand mixer or a heavy duty utensil. Mix until the potatoes are smooth.

  • Add in the sour cream, milk, salt, and pepper. Mix until the mashed potatoes are uniform. (If you would like to add other herbs or cheese, now is the time.)

Leftover Potato Skins
1 Tbsp Avocado Oil (Or other high heat oil)
Salt to Taste
Air Fry at 400°F on parchment for 12-13 minutes until crisp or in the oven at 450°F for approximately 15-18 minutes.
They turn out like crisp delicious chips.  Eat them or garnish with them!
