Ingredients
  

  • lbs Ground Pork
  • lbs Ground Beef Optional 30% Veal
  • 1 Cup Portobello Mushrooms Finely Chopped
  • ½ Cup Sweet Onion Finely Chopped
  • 2 T Fresh Garlic Crushed
  • 2 t Ground Black Pepper
  • 2 t Himalayan Pink Salt
  • ¼ Cup Parsley Finely Chopped
  • 2 T Fresh Oregano Finely Chopped- if none available use 1.5 T Dried Oregano
  • Cup Olive Oil
  • 2 T Worcestershire Sauce
  • 2 Large Eggs
  • 1 Cup Grated Parmesan
  • 1 Cup Gluten Free Panko or GF Breadcrumbs

Instructions
 

  • Preheat oven to 415°F.
  • Prep two baking sheets by either greasing them or using parchment paper.
  • Combine ingredients: In a large mixing bowl, combine everything except the eggs, Parmesan, and panko. Fold in the ingredients until evenly mixed. Add the eggs, Parmesan, and bread crumbs to the bowl and mix thoroughly. Use your hands to ensure the mixture is well combined.
  • Form a test meatball: Make a test meatball to ensure the ingredients bind and do not fall apart. If the meatball cracks, add another egg to the mixture and test again.
  • Shape the meatballs: Estimate or use a food scale to divide the meat mixture into approximately 36 two-inch diameter meatballs. Place them evenly spaced on the baking sheet.
  • Bake the meatballs: Place the baking sheets in the oven. If using two racks, rotate the baking sheets after 10 minutes. Cook until the internal temperature reaches 160°F, approximately 25 minutes for two-inch meatballs.
  • (Optional) Simmer in marinara sauce: Once cooked, transfer the meatballs to a large saucepan and simmer on low with your favorite marinara sauce for 10-15 minutes before serving.
