Ingredients
  

  • ¼ Cup Avocado Oil or Olive Oil
  • ¾ Cup Vidalia Onion- Finely Diced
  • 1 Tbsp Fresh Garlic- Crushed
  • 5 Tbsp Tomato Paste
  • 1 tsp Ground Cumin
  • ½ tsp Turmeric for color
  • 1 Cup Fresh Cut or Frozen Corn
  • 2 Cups Long Grain Rice
  • 2 Cups Chicken Broth
  • 2-1/4 Cups Water
  • 2 tsp Himalayan Pink Salt ½ tsp for Table or Sea Salt
  • Cup Cilantro Stems- Finely Chopped
  • ¼ Cup Cilantro Leaves- Chopped for garnishing

Instructions
 

  • Prep your ingredients.

  • In a medium sized pot, add the oil, onions, and garlic. Cook on medium heat for 2 minutes. Then mix in the tomato paste, cumin, turmeric, and salt. Cook for another 2 minutes while stirring every so often.

  • Then add the rice, corn, and cilantro stems. Once mixed in, pour in the chicken broth and water.

  • Set the heat to high and bring to a boil, stirring occasionally.. Once at a boil, reduce the heat to a low simmer and cover. Stir every 4 to 5 minutes. From simmer to completion is approximately 20-25 minutes.

  • Remove the rice from the heat and let the rice cool before serving.
  • Garnish with some cilantro or green onions and enjoy!!!
