Where did the idea for this Ridiculously Easy Cream Cheese Brownie Tart – Gluten Free come from? It sounds like something I would create, but actually, it came from my Aunt Chris of Cafe Sucre Farine! She texted me a couple of weeks ago saying this recipe is a must-have and asked if I could make a gluten-free version of it. After a little trial and error, we’ve nailed this delicious beauty! Get ready to impress!
I’ve mentioned this before, but it bears repeating: your typical 1:1 gluten-free flour isn’t quite 1:1. From my experience, gluten-free flour, while lacking the sticky glutinous quality, also tends to absorb more liquid. If you attempt a one-for-one substitution, you’ll need to either reduce the flour or increase the liquids. Also, baking time can vary with gluten-free flour. Chris’s recipe calls for baking for 22-28 minutes, but with the gluten-free substitutions, I needed a solid 35 minutes. The keys to its incredible moistness are the next two components: cream cheese and caramel cream cheese frosting! Essentially, they act as a vapor lock and prevent the brownie from drying out. Once it’s all incorporated together, the flavors meld into a subtle bliss.

Incredibly enough, I did not own a tart pan! Upon my aunt’s suggestion to make this, I realized I needed a trip to the store. Here are the factors to consider when choosing a good tart pan:

The tart pan I purchased was actually a three pack called Celebrate It Non-Stick Quiche and Tart Set. It was more than I was looking to spend, but I’m quite happy with the purchase. I originally purchased it at Michaels, but see that its cheaper on Amazon.
Shortcuts to the Cream Cheese Brownie Tart
Being me, I use pre-made ingredients as little as possible. To me, it’s a fun challenge to create my dishes entirely from scratch. However, there are four shortcuts you can take to achieve the final result of deliciousness, though I can’t necessarily endorse the outcome!
- Brownie Mix: If mixing together flour, salt, eggs, chocolate, butter, and espresso (or coffee) seems like a lot of work, buy a boxed brownie mix. I’ve had this King Arthur Gluten-Free Brownie Mix in the past and give it a thumbs-up. I haven’t tried making this Cream Cheese Brownie Tart with it, so no promises.
- Instant Espresso/Coffee Powder: Use this instead of pouring actual espresso into the chocolate mixture. A hit of coffee flavor does it justice. If you go this route, mix it with 2 Tbsp of water to help dilute the powder.
- Caramel Sauce: Buy caramel sauce to mix with a portion of your cream cheese. Or you can indulge yourself and make Cafe Sucre Farine’s Ridiculously Easy Caramel Sauce, which is what I did. It really is easy and quite amazing!

Tips and Tricks to Making This Cream Cheese Brownie Tart
- Make it in advance: You can keep this tart refrigerated for at least three days. It’s best served at room temperature, so pull it out of your fridge well in advance.
- Marbling Technique: Start with a dollop of caramel cream cheese in the middle and make 1-inch swirls towards the edge, repeating all the way around. This creates the gorgeous starburst or galaxy pattern you see in the pictures. I used a paring knife to make the swirls.
- Wrap the outside of your tart pan with foil to prevent any unwanted leakage.
