Where did the idea for this Ridiculously Easy Cream Cheese Brownie Tart – Gluten Free come from? It sounds like something I would create, but actually, it came from my Aunt Chris of Cafe Sucre Farine! She texted me a couple of weeks ago saying this recipe is a must-have and asked if I could make a gluten-free version of it. After a little trial and error, we’ve nailed this delicious beauty! Get ready to impress!

I’ve mentioned this before, but it bears repeating: your typical 1:1 gluten-free flour isn’t quite 1:1. From my experience, gluten-free flour, while lacking the sticky glutinous quality, also tends to absorb more liquid. If you attempt a one-for-one substitution, you’ll need to either reduce the flour or increase the liquids. Also, baking time can vary with gluten-free flour. Chris’s recipe calls for baking for 22-28 minutes, but with the gluten-free substitutions, I needed a solid 35 minutes. Keep these tips in mind the next time you’re subbing out ingredients to make a delicious gluten-free treat!

The Main Components of This Gluten Free Cream Cheese Brownie Tart

What are all the components of this Cream Cheese Brownie Tart? Let’s start with the base; it’s an amazingly moist brownie! The keys to its incredible moistness are the next two components: cream cheese and caramel cream cheese frosting! Essentially, they act as a vapor lock and prevent the brownie from drying out. Once it’s all incorporated together, the flavors meld into a subtle bliss.

The Tart Pan

Incredibly enough, I did not own a tart pan! Upon my aunt’s suggestion to make this, I realized I needed a trip to the store. Here are the factors to consider when choosing a good tart pan:

  • Non-Stick Coating: It might seem self-explanatory, but my quick research showed a plethora of non-stick tart pans out there! You want your crust to slide right out without any fuss.
  • Density: While all tart pans are somewhat thin, you want some thickness to them. A thin tart pan can deform and is more apt to burn your crust.
  • Drop Out Bottom: This feature made all the difference in the world for this Cream Cheese Brownie Tart! Trying to flip a tart onto parchment is a nightmare, we’ve all been there…

The tart pan I purchased was actually a three pack called Celebrate It Non-Stick Quiche and Tart Set. It was more than I was looking to spend, but I’m quite happy with the purchase. I originally purchased it at Michaels, but see that its cheaper on Amazon.

Shortcuts to the Cream Cheese Brownie Tart

Being me, I use pre-made ingredients as little as possible. To me, it’s a fun challenge to create my dishes entirely from scratch. However, there are four shortcuts you can take to achieve the final result of deliciousness, though I can’t necessarily endorse the outcome!

  1. Brownie Mix: If mixing together flour, salt, eggs, chocolate, butter, and espresso (or coffee) seems like a lot of work, buy a boxed brownie mix. I’ve had this King Arthur Gluten-Free Brownie Mix in the past and give it a thumbs-up. I haven’t tried making this Cream Cheese Brownie Tart with it, so no promises.
  2. Instant Espresso/Coffee Powder: Use this instead of pouring actual espresso into the chocolate mixture. A hit of coffee flavor does it justice. If you go this route, mix it with 2 Tbsp of water to help dilute the powder.
  3. Caramel Sauce: Buy caramel sauce to mix with a portion of your cream cheese. Or you can indulge yourself and make Cafe Sucre Farine’s Ridiculously Easy Caramel Sauce, which is what I did. It really is easy and quite amazing!

Tips and Tricks to Making This Cream Cheese Brownie Tart

  • Make it in advance: You can keep this tart refrigerated for at least three days. It’s best served at room temperature, so pull it out of your fridge well in advance.
  • Marbling Technique: Start with a dollop of caramel cream cheese in the middle and make 1-inch swirls towards the edge, repeating all the way around. This creates the gorgeous starburst or galaxy pattern you see in the pictures. I used a paring knife to make the swirls.
  • Wrap the outside of your tart pan with foil to prevent any unwanted leakage.

Ingredients

  • Brownie Crust
  • 1/2 Cup Semi Sweet Chocolate Chips

  • 1/4 Cup Espresso (You can also use Coffee or Instant Espresso Powder)

  • 1 Cup Granulated White Sugar

  • 1/2 Cup Salted Butter (can be unsalted)

  • 2 tsp Vanilla Extract

  • 1/2 Cup Unsweetened Cocoa Powder

  • 3 Large Eggs

  • 1 tsp Himalayan Pink Salt (or ½ tsp Kosher Salt)

  • 2/3 Cup Gluten Free Flour Mix (I use King Arthur Measure for Measure)

  • Caramel Cream Cheese Swirl
  • 8 oz Cream Cheese- Softened (full-fat or reduced-fat)

  • 1/2 Cup Caramel Sauce (Homemade tastes best, but store bought works too)

  • 1 Large Egg

  • 1 tsp Vanilla Extract

  • 1/2 tsp Himalayan Pink Salt (or ¼ tsp Kosher Salt)

Directions

  • Brownie Crust
  • Preheat your oven to 350°F and set one rack to the bottom ⅓ of your oven.
  • Grease a 9 or 10 inch non-stick tart pan with a removable bottom. Place inside a circular piece of parchment paper for easy removal, and set it aside. (I also wrapped tinfoil around the pan to avoid any spills.)
  • In a microwave safe mixing bowl, heat your Espresso, Chocolate, Cocoa Powder, Sugar, and Butter in the microwave in 30 second increments. Mix in between each microwave until the ingredients are melted and smooth.
  • Set the chocolate mixture aside for 5 minutes to cool.
  • Then add in the Eggs, Salt, Vanilla Extract, and finally whisk in the Gluten Free Flour.
  • Reserve approximately 1/4 Cup of the Brownie batter and set it aside.
  • Then pour the rest of the brownie base into your tart pan and also set it aside.
  • Caramel Cream Cheese Swirl
  • In a medium sized mixing bowl, whisk or beat the Cream Cheese and Caramel Sauce until it is whipped smooth.
  • Add the Egg, Vanilla Extra and Salt and whisk until all ingredients are combined.
  • Merging The Tart
  • Pour the Caramel Cream Cheese over the Brownie batter and carefully spread the Cream Cheese covering the entire tart.
  • Use the reserve 1/4 Cup of Brownie Batter and dollop it in the center on top of the Caramel Cream Cheese.
  • Using a paring knife, swirl from the center of the Brownie Batter to the edge of the pan approximately ¼ inch deep. Repeat this method going all the way around the pan to marble the top.
  • Place your tart pan in the oven and bake for 30-33 minutes. Use a toothpick to test the doneness of the tart. If it comes out clean and not “wet” with batter you should be good to go.
  • Remove the tart from the oven and let it cool for 15 minutes.
  • Slice and Enjoy!

Notes

  • Make sure you use the bottom 1/3 of your oven to keep the top from browning too quickly.
  • If the top does start prematurely browning, you can cover it lightly with tinfoil.
  • Cover the outside of your tart pan with tinfoil too to prevent any leakage.
  • Himalayan Pink Salt is rather mild, if you’re using Sea Salt, use half the amount.
  • If using Espresso Powder, mix it with a 1/4 Cup of hot water before adding it in.
